Mushroom Potage

Sakaeya’s Roasted Pork Shoulder with Mustard-Infused Sauce
Tender and succulent pork, gently roasted to bring out its full flavor, is paired with a fragrant roasted mustard sauce that complements without overpowering.
Accompanying elements—fluffy-sweet chestnuts, crisp lotus root, and the deep umami of daikoku shimeji mushrooms—create a harmonious interplay with the pork’s softness, layering the dish with the richness of autumn.

Pear & Hibiscus Tart
Delicately arranged slices of pear and hibiscus poached in syrup grace the top, while beneath lie layers of silky crème brûlée, fragrant country-style bread crumble, and pear-hibiscus jam.
